A light and creamy quiche without the crust, perfect for a low-carb diet.

Dairy & Eggs

  • 1.5 cups Cottage cheese
  • 4 Eggs
  • 0.5 cup Shredded mozzarella cheese

Vegetables & Spices

  • 1 cup Sautéed spinach + chopped onion
  • 1 pinch Nutmeg

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine cottage cheese, eggs, and nutmeg.
  3. Whisk until smooth and well combined.
  4. Stir in the sautéed spinach and onion mixture.
  5. Add the shredded mozzarella cheese and gently fold it in.
  6. Pour the mixture into a greased 9-inch pie dish or oven-safe skillet.
  7. Bake for 20-25 minutes, or until the quiche is set and lightly golden brown.
  8. Let cool slightly before serving.

Notes

For extra flavor, you can add a sprinkle of salt and pepper to the mixture.
