- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup dried cranberries, chopped
- 1/4 cup crushed pineapple, drained
- 1/4 cup chopped green onions
- 1/2 cup pecans, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese.
- Add the chopped dried cranberries, crushed pineapple, chopped green onions, garlic powder, salt, and black pepper. Mix until well combined.
- Form the mixture into a ball and wrap it in plastic wrap. Refrigerate for at least 2 hours to allow it to firm up.
- Once chilled, roll the cheeseball in chopped pecans until fully coated.
- Serve with crackers or fresh fruit.
Notes
- For a sweeter flavor, add a tablespoon of honey to the cheeseball mixture.
- Can be made a day in advance and stored in the refrigerator.
