- 1 pound boneless, skinless chicken thighs
- 4 cups chicken broth
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 cup heavy cream
- 3 tablespoons cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- In a crockpot, add the chicken, broth, carrots, potatoes, peas, onion, garlic, thyme, and rosemary.
- Season with salt and pepper, then stir to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, remove the chicken and shred it.
- In a small bowl, mix the cornstarch and water to form a slurry.
- Add the shredded chicken back to the crockpot along with the heavy cream and cornstarch slurry.
- Stir to combine and cook for an additional 30 minutes until thickened.
- Serve hot and enjoy!

- For added flavor, you can sauté the onions and garlic before adding to the crockpot.
