A comforting and creamy chicken stew made effortlessly in your crockpot.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • 3 tablespoons cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste

Instructions

  1. In a crockpot, add the chicken, broth, carrots, potatoes, peas, onion, garlic, thyme, and rosemary.
  2. Season with salt and pepper, then stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, remove the chicken and shred it.
  5. In a small bowl, mix the cornstarch and water to form a slurry.
  6. Add the shredded chicken back to the crockpot along with the heavy cream and cornstarch slurry.
  7. Stir to combine and cook for an additional 30 minutes until thickened.
  8. Serve hot and enjoy!

Notes

  • For added flavor, you can sauté the onions and garlic before adding to the crockpot.
  • This stew can be kept in the refrigerator for up to 3 days.
  • Freeze leftovers for a quick meal later.
