Delicious and tender chicken thighs cooked in a flavorful Mediterranean sauce.

Ingredients

  • 4 chicken thighs
  • 1 cup cherry tomatoes
  • 1 cup kalamata olives
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, oregano, and basil.
  2. Place the chicken in the slow cooker and add the cherry tomatoes, olives, onion, and garlic.
  3. Pour the olive oil and chicken broth over the top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Serve hot and enjoy!
