  • 4 salmon fillets (skin-on or skinless)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes, drained
  • ¾ cup chicken or vegetable broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • 1 tablespoon chopped fresh basil

Instructions

  1. Preheat oven to 400°F (200°C). Season salmon with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear salmon skin-side down 3 minutes, flip, and sear 1 minute more. Transfer to a plate.
  3. In the same skillet, add garlic and sun-dried tomatoes; sauté 1 minute until fragrant.
  4. Whisk in the broth, then stir in the cream and Parmesan. Simmer 2–3 minutes until slightly thickened.
  5. Add spinach and stir until wilted, about 1 minute.
  6. Return salmon to the skillet, spooning sauce over the top.
  7. Bake 8–10 minutes, until salmon flakes easily and reaches 145°F (63°C) internally.
  8. Garnish with fresh basil before serving.
