Preheat oven to 400°F (200°C). Season salmon with salt, pepper, and Italian seasoning.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear salmon skin-side down 3 minutes, flip, and sear 1 minute more. Transfer to a plate.
In the same skillet, add garlic and sun-dried tomatoes; sauté 1 minute until fragrant.
Whisk in the broth, then stir in the cream and Parmesan. Simmer 2–3 minutes until slightly thickened.
Add spinach and stir until wilted, about 1 minute.
Return salmon to the skillet, spooning sauce over the top.
Bake 8–10 minutes, until salmon flakes easily and reaches 145°F (63°C) internally.
