Simple and delicious spinach and cottage cheese flatbreads.

Wet Ingredients

  • 1 cup cottage cheese
  • 1 tbsp olive oil
  • 1 egg (lightly beaten)

Dry Ingredients & Mix-ins

  • 1.5 cups all-purpose flour
  • 3 tsp baking powder
  • 0.5 tsp salt
  • 2 oz baby spinach (micro chopped)
  • 0.5 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese and olive oil. Mix well.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and gently mix until just combined. Do not overmix.
  5. Stir in the micro-chopped spinach and mozzarella cheese.
  6. Drop spoonfuls of the dough onto the prepared baking sheet, leaving some space between each flagel.
  7. Brush the tops of the flagels with the lightly beaten egg.
  8. Bake for 12-15 minutes, or until golden brown and cooked through.

Notes

For a richer flavor, use full-fat cottage cheese. These flagels are best served fresh.
