Ingredients

Scale

  • 8 oz spaghetti – The perfect base for this dish.
  • 1 lb shrimp, peeled and deveined – Tender and juicy, shrimp add richness.
  • 4 cloves garlic, minced – Because garlic makes everything better!
  • 2 tablespoons olive oil – For sautéing and adding flavor.
  • 1 cup heavy cream – This creates that luscious creamy sauce.
  • 1 cup grated Parmesan cheese – Adds a savory, cheesy goodness.
  • Salt and pepper to taste – Simple seasonings that enhance flavor.
  • Fresh parsley, chopped – A lovely garnish that adds color and freshness.

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside. I usually like to add a pinch of salt to the boiling water for extra flavor.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic; it can turn bitter!
  3. Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and opaque. Season with salt and pepper to taste. The shrimp cook quickly, so keep an eye on them.
  4. Reduce the heat to low and stir in the heavy cream. Let it simmer for 2-3 minutes. This is where the magic happens!
  5. Gradually add the grated Parmesan cheese, stirring until the sauce is creamy and smooth. If the sauce is too thick, you can add a splash of pasta water to loosen it up.
  6. Combine the cooked spaghetti with the shrimp and sauce, mixing well to coat. The pasta should be beautifully enveloped in that creamy goodness.
  7. Serve immediately, garnished with chopped parsley. A sprinkle of extra Parmesan on top never hurts either!
