A quick, easy, and healthy Greek-inspired salad bowl featuring cottage cheese as a protein-rich base, tossed with fresh vegetables, olives, feta, and Greek dressing.

Ingredients

Scale

Main ingredients

  • 0.5 cup cottage cheese
  • 1 cup romaine lettuce, chopped
  • 0.25 cup kalamata olives, sliced
  • 0.25 cup crumbled feta cheese
  • 0.5 cucumber, diced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 red onion, thinly sliced (can soak in cold water for 10 mins to mellow flavor)
  • 2 tablespoons Greek dressing (store-bought or homemade)

Instructions

  1. Assemble Your Base: Grab a nice, medium-sized bowl. Start by spooning in your creamy cottage cheese.
  2. Pile on the Goodies: Now, it’s time to layer in all that fresh goodness. Add your chopped romaine lettuce, the sliced kalamata olives, the crumbled feta cheese, your diced cucumber, the halved cherry tomatoes, and finally, the thinly sliced red onion.
  3. Dress it Up: Drizzle your two tablespoons of Greek dressing evenly over the top. Don’t be shy!
  4. Toss Gently: Grab a spoon or fork and gently toss everything together. You want to coat all those lovely ingredients with the dressing without mushing up the cottage cheese too much. Just a few tender turns will do the trick.

Notes

This recipe is best enjoyed fresh. For meal prep, chop vegetables and store components separately. Ensure ingredients are fresh for best flavor. Avoid over-tossing to maintain texture.
