- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup unsalted butter, chilled
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 cup sourdough starter
- 1/4 cup cold water
- 1/2 cup fruit preserves
- 1 egg, beaten (for egg wash)
- In a large bowl, mix the flours, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the sourdough starter and cold water until the dough forms.
- Wrap the dough in plastic and chill for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and cut into rectangles.
- Place a dollop of fruit preserves on half of the rectangles.
- Top with the remaining rectangles and seal the edges with a fork.
- Brush with the beaten egg.
- Bake for 20-25 minutes until golden brown.
- Let cool before serving.
