A delicious and easy Instant Pot Chicken and Rice recipe that is perfect for busy weeknights.

Ingredients

  • 1 pound chicken breasts
  • 2 cups uncooked rice
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Turn on the Instant Pot and set it to ‘Sauté’. Add olive oil.
  2. Season the chicken breasts with garlic powder, onion powder, salt, and black pepper. Sauté until browned.
  3. Add rice and chicken broth, then stir to combine.
  4. Lock the lid and set to ‘Manual’ for 8 minutes.
  5. Once done, allow for natural pressure release for 10 minutes, then quick release the remaining pressure.
  6. Stir in frozen peas and let sit for a few minutes before serving.

Notes

  • For extra flavor, consider adding herbs like thyme or rosemary.
  • Substitute brown rice for white rice, but adjust cooking time accordingly.
