Ingredients

  • 2 large potatoes, diced

  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups water
  • 2 carrots, chopped
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add potatoes, carrots, lentils, broth, water, thyme, and cumin.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
