This hearty one-pot slow cooker pot roast with veggies is perfect for a comforting family meal.

Ingredients

  • 3 pounds chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 3 potatoes, cut into chunks
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the roast until browned on all sides.
  3. Place the chopped onion, garlic, carrots, and potatoes in the slow cooker.
  4. Add the seared roast on top of the vegetables.
  5. In a bowl, mix the beef broth, Worcestershire sauce, thyme, and rosemary. Pour over the roast.
  6. Cover and cook on low for 8 hours or until the meat is tender.
  7. Shred the meat with two forks and serve with the vegetables.

Notes

  • For added flavor, consider adding bay leaves during cooking.
  • This recipe can be made ahead and reheated for leftovers.
