- 3 pounds chuck roast
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, cut into chunks
- 3 potatoes, cut into chunks
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Season the chuck roast with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the roast until browned on all sides.
- Place the chopped onion, garlic, carrots, and potatoes in the slow cooker.
- Add the seared roast on top of the vegetables.
- In a bowl, mix the beef broth, Worcestershire sauce, thyme, and rosemary. Pour over the roast.
- Cover and cook on low for 8 hours or until the meat is tender.
- Shred the meat with two forks and serve with the vegetables.
