Loaded baked potatoes with a taco twist!

Potatoes & Beef

  • 1 pound lean ground beef
  • 4 medium Russet potatoes

Taco Toppings

  • 1 packet (1 ounce) taco seasoning
  • 0.5 cup water
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.25 cup chopped green onions
  • 0.5 cup diced tomatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce potatoes several times with a fork.
  3. Bake potatoes for 45-60 minutes, or until tender.
  4. While potatoes bake, brown ground beef in a skillet over medium-high heat. Drain excess fat.
  5. Stir in taco seasoning and water; simmer for 5 minutes.
  6. Once potatoes are cooked, cut them lengthwise and fluff the inside with a fork.
  7. Spoon the taco meat mixture into the potatoes.
  8. Top with cheddar cheese, sour cream, green onions, and diced tomatoes.

Notes

For extra flavor, consider adding a dollop of guacamole or salsa.
