This refreshing vegan white bean salad makes a perfect side dish or a light main course.

Ingredients

  • 1 can white beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt to taste

Instructions

  1. In a large bowl, combine the white beans, cherry tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, and salt.
  3. Pour the dressing over the salad and toss until everything is well combined.
  4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
