Baked Feta Chicken

This recipe for Baked Feta Chicken creates a flavorful and easy weeknight meal. The juicy chicken is baked with a creamy feta sauce and bursts of fresh tomatoes and basil.

Ingredients
  

  • * 1½ – 2 pounds chicken breasts boneless and skinless (about 4 breasts)
  • * 2 teaspoons Italian seasoning
  • * ½ teaspoon chili powder
  • * ½ teaspoon salt
  • * ¼ teaspoon black pepper
  • * 2 tablespoons extra virgin olive oil
  • * 1 tablespoon minced garlic
  • * ½ cup chicken stock
  • * 2 tablespoons lemon juice
  • * 8 ounces block of feta cheese
  • * 1 pint grape tomatoes
  • * 5-6 fresh basil leaves thinly sliced into ribbons

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
  • In a small bowl, combine Italian seasoning, chili powder, salt, and pepper.
  • Rub the spice mixture evenly over both sides of the chicken breasts.
  • Heat olive oil in an oven-safe skillet (or a separate skillet if your baking dish isn't oven-safe) over medium heat. Add minced garlic and cook for about 30 seconds, until fragrant. Be careful not to burn the garlic.
  • Add the chicken breasts to the skillet and cook for 2-3 minutes per side, until lightly browned.
  • Arrange the grape tomatoes around the chicken in the baking dish. Crumble the feta cheese over the tomatoes and chicken.
  • In a small bowl, whisk together the chicken stock and lemon juice. Pour this mixture evenly over the chicken and tomatoes.
  • Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Garnish with fresh basil ribbons before serving.

Notes

For extra flavor, marinate the chicken in the spice mixture for at least 30 minutes before cooking. You can substitute other herbs like oregano or thyme for the Italian seasoning. If you don't have grape tomatoes, cherry tomatoes or diced Roma tomatoes will work well. For a spicier dish, add a pinch of red pepper flakes.
