Copycat Starbucks Egg Bites

  • 9 large eggs The fluffy, golden base of our delicious bites.
  • 1.5 cups cottage cheese This is the secret to that unbelievably creamy, custard-like texture. Don't skip it!
  • 1 teaspoon salt Just enough to enhance all those yummy flavors.
  • 2 cups shredded Gruyere cheese This nutty, slightly sweet cheese is the star for that classic Starbucks taste.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, crack all 9 large eggs. Add the cottage cheese and salt. Beat everything together until it's wonderfully smooth and well combined.

  • Gently stir in the shredded Gruyere cheese until evenly distributed.

  • Lightly grease a standard 12-cup muffin tin. Carefully pour the egg mixture evenly into each muffin cup, filling them about ¾ of the way full.
  • Bake for about 20-25 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean. They should be puffed up and have a lovely golden hue.

Notes

Substitutions: Monterey Jack, sharp cheddar, or a blend of favorite cheeses can be used instead of Gruyere. Add finely chopped spinach, bell peppers, mushrooms, chives, sausage bits for variations. Fresh chives or parsley can be added for extra flavor. Store in an airtight container in the refrigerator for up to 3-4 days, or freeze for 2-3 months.
