Crispy Chickpea & Sweet Potato Fritters

Ingredients
  

Vegetables & Legumes

  • 1 cup cooked sweet potato mashed
  • 1 can (15 oz) chickpeas rinsed and mashed
  • 0.25 cup red onion finely chopped
  • 2 cloves garlic minced

Spices & Binding

  • 0.25 cup fresh cilantro or parsley chopped
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.25 cup oat flour (or any flour of choice)
  • salt and pepper to taste
  • olive oil for pan frying

Instructions
 

  • In a large bowl, mash the cooked sweet potato and chickpeas together.
  • Add the red onion, minced garlic, cilantro/parsley, cumin, smoked paprika, oat flour, salt, and pepper. Mix well to combine.
  • Heat a tablespoon of olive oil in a frying pan over medium heat.
  • Form the mixture into small patties or fritters (about 2-3 inches in diameter).
  • Carefully place the fritters in the hot pan and cook for 3-4 minutes per side, or until golden brown and crispy.
  • Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
  • Serve immediately and enjoy!

Notes

For extra flavor, consider adding a pinch of cayenne pepper or a squeeze of lemon juice.
