cooked sweet potato
mashed

chickpeas
rinsed and mashed

(or any flour of choice)

Instructions
In a large bowl, mash the cooked sweet potato and chickpeas together.
Add the red onion, minced garlic, cilantro/parsley, cumin, smoked paprika, oat flour, salt, and pepper. Mix well to combine.
Heat a tablespoon of olive oil in a frying pan over medium heat.
Form the mixture into small patties or fritters (about 2-3 inches in diameter).
Carefully place the fritters in the hot pan and cook for 3-4 minutes per side, or until golden brown and crispy.
Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
Serve immediately and enjoy!
Notes
For extra flavor, consider adding a pinch of cayenne pepper or a squeeze of lemon juice.
