Crispy Hot Honey Feta Chicken

This recipe delivers crispy, juicy chicken breasts with a sweet and spicy kick from the hot honey and a salty, tangy finish from the feta cheese. It's a quick and easy weeknight meal that's sure to impress!

Ingredients
  

  • * 4 boneless skinless chicken breasts
  • * 1 tablespoon olive oil
  • * 1 teaspoon garlic powder
  • * 1 teaspoon paprika
  • * 1/2 teaspoon salt
  • * 1/4 teaspoon black pepper
  • * 1/2 cup crumbled feta cheese
  • * 3 tablespoons hot honey
  • * Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, combine olive oil, garlic powder, paprika, salt, and pepper.
  • Place chicken breasts on the prepared baking sheet. Brush each chicken breast generously with the olive oil mixture, ensuring both sides are coated.
  • Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). You can check for doneness by inserting a meat thermometer into the thickest part of the chicken.
  • Remove the chicken from the oven and sprinkle each breast generously with crumbled feta cheese.
  • Drizzle 1 tablespoon of hot honey over each chicken breast.
  • Return the baking sheet to the oven for 2-3 minutes, or until the feta cheese is melted and slightly browned.
  • Garnish with fresh parsley and serve immediately.

Notes

For extra crispy chicken, you can broil the chicken for the last 2-3 minutes, keeping a close eye to prevent burning. You can adjust the amount of hot honey to your preferred level of spiciness. If you don't have hot honey, you can substitute with a regular honey and a pinch of red pepper flakes. Other cheeses like goat cheese or parmesan would also be delicious substitutions for the feta.
