A warm, comforting, and ridiculously simple cottage cheese breakfast bake that's perfect for busy mornings. It's a crowd-pleaser and can even be made ahead.

  • 2 cups full-fat cottage cheese This is the creamy, dreamy base!
  • 4 large eggs To bind everything together and give it that lovely eggy richness.
  • 4 tablespoons sweetener Erythritol, monk fruit sweetener, honey, or maple syrup. Choose your favorite!
  • 1 teaspoon vanilla extract For that classic warm, comforting aroma and flavor.
  • 2 tablespoons cornstarch or coconut flour This little bit helps the bake set up perfectly. Cornstarch is my go-to for a smooth texture.
  • 1.5 cups berries Fresh or frozen blueberries, raspberries, or cherries. Use what you have on hand. Frozen work wonderfully here.
  • 1 teaspoon lemon zest Optional. This is my little secret for a brighter, more vibrant flavor.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a big bowl, add your cottage cheese, eggs, sweetener, and vanilla extract. Give it a good whisk or stir until everything is nicely combined and looks smooth.
  • Stir in your cornstarch or coconut flour. Keep stirring until you don't see any powdery lumps.
  • Carefully add your beautiful berries and the lemon zest (if you're using it). Fold them in gently so you don't mash the berries too much.
  • Pour your mixture into an 8x8 inch baking dish, spreading it out evenly.
  • Bake in your preheated oven for about 25-30 minutes. You'll know it's ready when the edges look set and it's got a light, golden hue on top.
  • Let it cool for about 5-10 minutes before serving.

Notes

This recipe is wonderfully forgiving and can be customized with different fruits, spices, or nuts. The batter can be prepared the night before (without berries) and refrigerated. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days and can be enjoyed cold or gently reheated.
