Chicken and Vegetables

  • 1 lb Boneless, skinless chicken breasts Cut into 1-inch cubes
  • 1 cup Sliced bell peppers (any color)
  • 1 cup Sliced onions
  • 0.5 cup Mushrooms Sliced

Sauce and Seasoning

  • 0.5 cup Butter Salted
  • 0.5 cup Chicken broth
  • 1 tbsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions
 

  • In a large skillet, melt butter over medium-high heat.
  • Add chicken and cook until browned on all sides.
  • Add bell peppers, onions, and mushrooms; cook until softened, about 5 minutes.
  • Stir in garlic powder, paprika, salt, and pepper.
  • Pour in chicken broth, bring to a simmer, and reduce heat to low.
  • Cover and cook for 15-20 minutes, or until chicken is cooked through.
  • Serve immediately.

Notes

For extra richness, you can add a splash of heavy cream at the end. Serve with mashed potatoes or rice.
