20-Minute Sausage and Zucchini Skillet

A speedy and delicious weeknight meal that comes together in about 20 minutes, featuring sausage, zucchini, and bell peppers seasoned with herbs and spices.

  • 2.5 tablespoons olive or avocado oil
  • 4 fully cooked sausages sliced into ¼ inch thick circles
  • 2 medium zucchini cubed
  • 1 onion cut into ¾ inch pieces
  • 1 bell pepper any color, cut into ¾ inch pieces
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 1 teaspoon minced garlic fresh
  • Fresh basil for garnish (optional)

Instructions
 

  • Grab a large skillet and pour in your olive or avocado oil. Place it over medium-high heat.
  • Toss in your sliced sausages. Let them sizzle and brown nicely on both sides. This usually takes about 3-4 minutes.

  • Add the cubed zucchini, onion pieces, and bell pepper pieces to the skillet with the browned sausage.

  • Sprinkle in the salt, dried oregano, dried basil, garlic powder, onion powder, and black pepper. Give everything a good stir to coat.

  • Stir in the minced fresh garlic.

  • Continue to cook, stirring occasionally, for about 8-10 minutes, until the vegetables are tender-crisp.
  • If desired, tear some fresh basil leaves and sprinkle them over the top before serving.

Notes

The recipe is very adaptable. Feel free to substitute vegetables or sausages. For extra flavor, a dash of red pepper flakes or Italian seasoning can be added. A tablespoon or two of marinara sauce or balsamic glaze can also be stirred in during the last few minutes of cooking.
