Air Fryer Cheesy Tortilla

A ridiculously easy, crazy fast, and oh-so-satisfyingly cheesy and crispy snack ready in under 10 minutes.

Main Ingredients

  • 2 Flour tortillas regular size, Any kind you like will work!
  • 1 tbsp Butter soft, for beautiful golden crispiness
  • 0.5 cup Mozzarella cheese Shredded mozzarella melts perfectly gooey
  • Garlic powder a little sprinkle for a savory kick
  • Italian herbs a pinch for classic flavor, dried oregano or Italian blend
  • Fresh Parsley for garnish (optional), chopped

Instructions
 

  • First things first, grab one of your tortillas and lay it out flat on a clean surface.
  • Now, spoon about half a cup of that lovely mozzarella cheese evenly over just one half of the tortilla. Don't go all the way to the edges; leave a little border.
  • Next, give that cheese a little sprinkle of garlic powder and a pinch of your Italian herbs. Seasoning the cheese directly makes sure that flavor gets right in there!
  • Now for the fold! Carefully fold the empty half of the tortilla over the cheesy side, creating a neat little half-moon pocket. Gently press the edges together.
  • Time for the butter! Take your soft butter and spread it evenly all over the outside of the folded tortilla. Make sure both sides get coated. This is what helps it get that amazing golden-brown crunch in the air fryer.
  • Okay, open up your air fryer basket. Carefully place the buttered tortilla inside. Depending on the size of your air fryer, you might be able to fit two, but don't overlap them!
  • Close the basket and air fry at 380°F (190°C). I find that 6-8 minutes is usually perfect. Around the halfway point (about 3-4 minutes in), you might want to carefully flip it using tongs to ensure both sides get evenly golden and crispy. You'll know it's done when the tortilla is beautifully golden brown and crispy, and you can see that cheese is all melty and bubbly inside.
  • Carefully remove the hot tortilla from the air fryer. If you're feeling fancy (or just have some on hand), sprinkle a little fresh chopped parsley over the top before serving.

Notes

These are best eaten right away when hot and crispy. If you have leftovers, store in an airtight container in the fridge for 1-2 days. Reheat in the air fryer at 350°F (175°C) for a few minutes until crispy and cheese is melted (avoid microwaving). Tips: Don't overfill; use soft butter; air fryer cooking times vary, so watch carefully the first time; use tongs for handling hot food. Substitutions/Additions: Try other cheeses (cheddar, Monterey Jack, Parmesan), add red pepper flakes for heat, or small amounts of cooked protein (chicken), salsa, veggies (onions, peppers), or beans. Other herbs like just oregano or smoked paprika can be used. Flour tortillas work best; corn tortillas can be prone to breaking. Can be made in a skillet on the stovetop over medium heat if you don't have an air fryer. Pre-shredded cheese is fine.
