Australian Busters

These cheesy, spicy Australian Busters are a delicious savory snack or appetizer, perfect for parties or a quick bite. Their flaky texture and sharp cheddar flavor are addictive!

Ingredients

  • * 8 tablespoons 1 stick unsalted butter, diced
  • * 2 cups all-purpose flour
  • * 1 teaspoon salt
  • * 1/8 teaspoon cayenne pepper
  • * 3 ½ cups shredded sharp cheddar cheese loosely packed
  • * 6-7 tablespoons ice water

Instructions

  • Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, salt, and cayenne pepper.
  • Cut in the cold, diced butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Work quickly to prevent the butter from melting.
  • Stir in the shredded cheddar cheese.
  • Gradually add the ice water, one tablespoon at a time, mixing gently until the dough just comes together. Do not overmix.
  • Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle.
  • Use a 2-inch biscuit cutter or a sharp knife to cut out biscuits. Reroll scraps to make more biscuits.
  • Place the biscuits onto the prepared baking sheet, leaving a little space between each.
  • Bake for 15-20 minutes, or until the biscuits are golden brown and cooked through.
  • Let cool slightly on the baking sheet before serving.

Notes

For extra flavor, you can add 1/4 teaspoon of onion powder or garlic powder to the dry ingredients. If you prefer a milder flavor, reduce the amount of cayenne pepper or omit it altogether. You can also substitute other types of cheese, such as Colby Jack or Monterey Jack.
