Ingredients
  

Wet Ingredients

  • 2 cups mashed ripe bananas
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
  • 1 cup chopped apples Use your favorite variety

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mash bananas. Add oil, eggs, and sugar; mix well.
  • In a separate bowl, whisk together flour, baking soda, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the chopped walnuts and apples.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cake cool completely in the pan before serving.

Notes

This cake is best served at room temperature. You can store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
