Instructions
Preheat oven to 375°F (190°C).
In a saucepan, combine blackberries, water, 1 cup sugar, and 1/2 tsp salt. Bring to a simmer over medium heat.
Reduce heat and simmer for 10 minutes, or until blackberries have softened and released their juices. Stir in lemon extract.
In a large bowl, whisk together flour, baking powder, 1 tbsp sugar, 1/4 tsp salt, and nutmeg.
Stir in milk until just combined. Do not overmix.
Drop spoonfuls of the dumpling batter onto the blackberry mixture in the prepared baking dish.
Bake for 30-35 minutes, or until dumplings are golden brown and cooked through.
Serve warm.
Notes
For a richer flavor, use brown sugar instead of white sugar.
