Blackberry Dumplings

Sweet and fluffy dumplings filled with juicy blackberries.

Ingredients
  

Filling

  • 1 quart Fresh or frozen blackberries rinsed
  • 1 cup Water
  • 1 cup Sugar
  • 0.5 tsp Salt
  • 0.5 tsp Lemon extract

Dumplings

  • 1.5 cups Flour
  • 2 tsp Baking powder
  • 1 Tbsp Sugar
  • 0.25 tsp Salt
  • 0.25 tsp Nutmeg
  • 0.67 cup Milk

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a saucepan, combine blackberries, water, 1 cup sugar, and 1/2 tsp salt. Bring to a simmer over medium heat.
  • Reduce heat and simmer for 10 minutes, or until blackberries have softened and released their juices. Stir in lemon extract.
  • In a large bowl, whisk together flour, baking powder, 1 tbsp sugar, 1/4 tsp salt, and nutmeg.
  • Stir in milk until just combined. Do not overmix.
  • Drop spoonfuls of the dumpling batter onto the blackberry mixture in the prepared baking dish.
  • Bake for 30-35 minutes, or until dumplings are golden brown and cooked through.
  • Serve warm.

Notes

For a richer flavor, use brown sugar instead of white sugar.
