Ingredients
Rhubarb Filling

chopped rhubarb
fresh or frozen
Crumble Topping

unsalted butter
melted

all-purpose flour

brown sugar

Instructions
Preheat oven to 375°F (190°C).
In a bowl, combine the chopped rhubarb.
In a separate bowl, combine melted butter, flour, brown sugar, and cinnamon (if using).
Mix until crumbly.
Fill each muffin cup about halfway with the rhubarb mixture.
Top with the crumble mixture.
Bake for 20-25 minutes, or until golden brown and bubbly.
Let cool slightly before serving.
Notes
These crumble bites are best served warm. Store leftovers in an airtight container at room temperature for up to 3 days.
