Ingredients
  

Rhubarb Filling

  • 1 cup chopped rhubarb fresh or frozen

Crumble Topping

  • 0.5 cup unsalted butter melted
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 tsp cinnamon optional

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine the chopped rhubarb.
  • In a separate bowl, combine melted butter, flour, brown sugar, and cinnamon (if using).
  • Mix until crumbly.
  • Fill each muffin cup about halfway with the rhubarb mixture.
  • Top with the crumble mixture.
  • Bake for 20-25 minutes, or until golden brown and bubbly.
  • Let cool slightly before serving.

Notes

These crumble bites are best served warm. Store leftovers in an airtight container at room temperature for up to 3 days.
