Caramelized Onion Jam

  • 2 tablespoons vegetable or olive oil
  • 3 large yellow onions thinly sliced
  • 2 cloves garlic finely chopped
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon sugar pinch
  • 0.33 cup maple syrup
  • 0.33 cup red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon thyme chopped fresh
  • 1 teaspoon rosemary chopped fresh
  • 2 tablespoons parsley chopped fresh

Instructions
 

  • Heat oil in a large skillet or pot over medium heat. Add thinly sliced onions and cook, stirring occasionally, until softened and starting to turn golden brown (about 15-20 minutes).

  • Add chopped garlic, salt, pepper, and sugar. Stir and cook for another couple of minutes until fragrant.

  • Pour in maple syrup, red wine vinegar, and Worcestershire sauce. Stir to combine.

  • Bring to a gentle simmer, then reduce heat to low. Cook uncovered for 30-40 minutes, stirring occasionally, until thickened and a deep caramel color.
  • Stir in chopped fresh thyme and rosemary. Let mingle for a minute.

  • Remove from heat and stir in chopped fresh parsley for a fresh finish.

  • Let cool completely before serving or storing.

Notes

This jam can be stored in the refrigerator for up to 2 weeks or frozen for up to 3 months.
