  • 9x5 inch loaf pan Grease and flour the pan before baking.

Ingredients
  

Wet Ingredients

  • 1 large egg
  • 0.5 cup packed light brown sugar
  • 0.33 cup melted coconut oil or vegetable oil
  • 0.25 cup sour cream or Greek yogurt
  • 2 tsp vanilla extract

Dry Ingredients

  • 0.25 cup granulated sugar
  • 2 tsp cinnamon
  • 0.5 tsp ground nutmeg
  • 1 cup all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 1 pinch salt
  • 0.75 cup grated carrots
  • 0.75 cup grated apples unpeeled

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a large bowl, whisk together the egg, brown sugar, coconut oil, and vanilla extract.
  • In a separate bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Stir in the grated carrots and apples.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store leftover bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
