Cheeseburger Tortellini

A fun twist on cheeseburgers using tortellini!

Ingredients
  

Cheeseburger Filling

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 Small onion, diced
  • 2 cloves Garlic, minced
  • 1 Bell pepper (any color), diced

Sauce and Cheese

  • 9 ounces Cheese tortellini (fresh or frozen)
  • 1 cup Beef broth
  • 1 cup Shredded cheddar cheese
  • 1 tablespoon Ketchup
  • 1 tablespoon Mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions
 

  • Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  • Add the olive oil to the skillet, then sauté the onion, garlic, and bell pepper until softened.
  • In a separate pot, bring the beef broth to a boil. Add the cheese tortellini and cook according to package directions.
  • Stir in the ketchup, mustard, and Worcestershire sauce into the ground beef mixture.
  • Drain the tortellini, reserving about 1/2 cup of the cooking liquid if needed.
  • Add the cooked tortellini to the skillet with the ground beef mixture. Stir in the shredded cheddar cheese until melted and combined.
  • Season with salt and pepper to taste. Add a little reserved cooking liquid if the sauce is too thick.
  • Serve immediately, topped with your favorite toppings such as diced tomatoes, pickles, or green onions.
