Cheesy Cabbage Beef Casserole

Ingredients
  

Vegetables

  • 1 medium head cabbage chopped
  • 1 onion chopped
  • 2 cloves garlic minced

Meat and Other Ingredients

  • 1 pound ground beef
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, brown the ground beef (ing_4). Drain off any excess grease.
  • Add the chopped onion (ing_2) and minced garlic (ing_3) to the skillet and cook until softened.
  • Stir in the chopped cabbage (ing_1), diced tomatoes (ing_5), cooked rice (ing_6), Italian seasoning (ing_7), salt, and pepper.
  • Pour the beef broth (ing_9) into the skillet and bring to a simmer.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Sprinkle the shredded cheddar cheese (ing_8) evenly over the top.
  • Bake for 30-40 minutes, or until bubbly and heated through.

Notes

Leftovers can be stored in the refrigerator for up to 3 days.
