Ingredients
  

Rice and Dairy

  • 1 cup long grain white rice
  • 3 tablespoons unsalted butter
  • 8 ounces whole milk
  • 4 ounces sharp cheddar cheese grated

Aromatics and Seasoning

  • 0.5 small onion small diced
  • 8 ounces chicken broth
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper

Instructions
 

  • Melt butter in a medium saucepan over medium heat.
  • Add the diced onion and cook until softened, about 3-5 minutes.
  • Stir in the rice and cook for 1 minute, stirring constantly.
  • Pour in the chicken broth and milk. Add paprika, salt, and pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed.
  • Remove from heat and stir in the grated cheddar cheese until melted and creamy.
  • Serve immediately.

Notes

For a richer flavor, use chicken stock instead of broth. You can also experiment with different types of cheese.
