Instructions
Melt butter in a medium saucepan over medium heat.
Add the diced onion and cook until softened, about 3-5 minutes.
Stir in the rice and cook for 1 minute, stirring constantly.
Pour in the chicken broth and milk. Add paprika, salt, and pepper.
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed.
Remove from heat and stir in the grated cheddar cheese until melted and creamy.
Serve immediately.
Notes
For a richer flavor, use chicken stock instead of broth. You can also experiment with different types of cheese.
