Cheesy Tater Tot Meatloaf Casserole

Ingredients
  

Meatloaf Mixture

  • 1 lb ground beef
  • 0.5 cup bread crumbs
  • 1 egg
  • 0.5 cup diced onion
  • 0.5 cup shredded cheddar cheese (for meatloaf mixture)

Topping & Other Ingredients

  • 1 cup shredded cheddar cheese (for topping)
  • 0.5 cup ketchup (plus extra for topping)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 3 cups frozen tater tots

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground beef, bread crumbs, egg, diced onion, 1/2 cup cheddar cheese, garlic powder, onion powder, salt, and pepper.
  • Mix well and form into a meatloaf shape in the prepared baking dish.
  • Arrange tater tots in a single layer over the meatloaf.
  • Spread the remaining 1 cup of cheddar cheese evenly over the tater tots.
  • Drizzle with 1/2 cup ketchup and bake for 40-45 minutes, or until the tater tots are golden brown and the meatloaf is cooked through.
  • Let cool slightly before serving. Add extra ketchup as desired.

Notes

For extra flavor, consider adding Worcestershire sauce or brown sugar to the meatloaf mixture.
