Chicken Sausages with Zucchini, Tomatoes, and Pasta

Ingredients
  

Vegetables

  • 1 medium zucchini sliced into half-moons
  • 1 pint cherry tomatoes halved
  • 1 small onion finely chopped

Pasta and Sausage

  • 8 ounces chicken sausages sliced into 1-inch pieces
  • 8 ounces pasta any short pasta shape
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano

Instructions
 

  • Cook pasta according to package directions. Drain and set aside.
  • While pasta cooks, heat olive oil in a large skillet over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add chicken sausages and cook until browned, about 5-7 minutes.
  • Stir in zucchini, tomatoes, and oregano. Cook until vegetables are tender-crisp, about 5-7 minutes.
  • Add cooked pasta to the skillet and toss to combine.
  • Serve immediately.

Notes

You can add other vegetables like bell peppers or spinach. Feel free to adjust seasonings to your taste.
