Chili-Lime Shrimp Skewers

These zesty chili-lime shrimp skewers are quick to make and perfect for a weeknight dinner or a summer barbecue. The vibrant marinade infuses the shrimp with delicious flavor.

Ingredients
  

  • * 1 lb large shrimp peeled and deveined
  • * 2 tbsp olive oil
  • * Zest and juice of 1 lime
  • * 1 garlic clove minced
  • * 1/2 tsp chili flakes or more, to taste
  • * 1 tbsp chopped cilantro
  • * 1/2 tsp salt
  • * 1/4 tsp black pepper
  • * 8-12 wooden skewers soaked in water for at least 30 minutes

Instructions
 

  • In a medium bowl, whisk together olive oil, lime zest, lime juice, minced garlic, chili flakes, cilantro, salt, and pepper.
  • Add the shrimp to the bowl and gently toss to coat them evenly in the marinade.
  • Cover the bowl and refrigerate for at least 15 minutes, or up to 2 hours, to allow the shrimp to marinate and absorb the flavors.
  • Preheat your grill or grill pan to medium-high heat.
  • Thread the marinated shrimp onto the soaked wooden skewers, leaving a little space between each shrimp for even cooking.
  • Grill the shrimp skewers for 2-3 minutes per side, or until they are pink and cooked through. Be careful not to overcook them, as they will become tough.
  • Remove the skewers from the grill and serve immediately. Garnish with extra cilantro, if desired.

Notes

For extra flavor, add a pinch of smoked paprika or cumin to the marinade. You can also substitute other types of seafood, such as scallops or fish, for the shrimp. If you don't have wooden skewers, metal skewers will work as well. Remember to adjust the cooking time depending on the size of your shrimp and the heat of your grill. Always ensure the shrimp is cooked thoroughly before consuming.
