Cloud Bread ☁️🍞

This recipe creates light and fluffy cloud bread, perfect for a low-carb or ketogenic diet. It's surprisingly easy to make and tastes delicious!

Ingredients
  

  • - 3 eggs 🥚
  • - 3 tbsp full-fat cream cheese room temperature 🧀
  • - 1/4 tsp cream of tartar

Instructions
 

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • In a large bowl, beat the egg whites with an electric mixer until stiff peaks form. Be sure the bowl is completely clean and grease-free for optimal whipping.
  • In a separate bowl, beat the egg yolks with the cream cheese, cream of tartar, and salt until smooth and creamy.
  • Gently fold the egg yolk mixture into the whipped egg whites in three additions, being careful not to deflate the egg whites. Use a spatula and fold gently from the bottom up.
  • Spoon three mounds of the mixture onto the prepared baking sheet, leaving space between each. Each mound should be about 2-3 inches in diameter.
  • Bake for 15-20 minutes, or until the cloud bread is lightly golden brown and firm to the touch.
  • Remove from the oven and let cool slightly on the baking sheet before serving.

Notes

* For sweeter cloud bread, add a teaspoon of sweetener like stevia or erythritol to the egg yolk mixture.
* You can add flavorings such as vanilla extract or almond extract to the egg yolk mixture.
* These are best served fresh. They can be stored in an airtight container at room temperature for a day or two, but they may lose some of their fluffiness.
* If your cloud bread is browning too quickly, reduce the oven temperature slightly.
