Cornbread Waffle Bites with Smoked Gouda and Honey

Ingredients
  

Dry Ingredients

  • 1 cup yellow cornmeal
  • 0.75 cup all-purpose flour
  • 2 tbsp sugar
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt

Wet Ingredients & Mix-ins

  • 1 cup buttermilk
  • 2 large eggs
  • 0.25 cup unsalted butter, melted
  • 1 tsp fresh thyme leaves optional
  • 1 cup shredded smoked gouda cheese

To Finish

  • Honey for drizzling
  • Extra fresh thyme for garnish

Instructions
 

  • Preheat waffle iron according to manufacturer's instructions.
  • In a large bowl, whisk together the dry ingredients (ing_1, ing_2, ing_3, ing_4, ing_5, ing_6).
  • In a separate bowl, whisk together the wet ingredients (ing_7, ing_8, ing_9, ing_10).
  • Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  • Stir in the shredded smoked gouda cheese (ing_11).
  • Lightly grease the preheated waffle iron. Pour ¼ cup of batter onto the hot surface of the waffle iron for each bite.
  • Cook according to waffle iron instructions, until golden brown and crispy. This usually takes 2-3 minutes.
  • Serve immediately, drizzled with honey (ing_12) and garnished with fresh thyme (ing_13).

Notes

For extra flavor, try adding a pinch of cayenne pepper to the batter.
