Ingredients
  

Dairy & Eggs

  • 1.5 cups Cottage cheese
  • 4 Eggs
  • 0.5 cup Shredded mozzarella cheese

Vegetables & Spices

  • 1 cup Sautéed spinach + chopped onion
  • 1 pinch Nutmeg

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine cottage cheese, eggs, and nutmeg.
  • Whisk until smooth and well combined.
  • Stir in the sautéed spinach and onion mixture.
  • Add the shredded mozzarella cheese and gently fold it in.
  • Pour the mixture into a greased 9-inch pie dish or oven-safe skillet.
  • Bake for 20-25 minutes, or until the quiche is set and lightly golden brown.
  • Let cool slightly before serving.

Notes

For extra flavor, you can add a sprinkle of salt and pepper to the mixture.
