  • 2 cups Cottage Cheese Full-fat or low-fat works
  • 1 cup Oats Rolled oats or quick oats
  • 3 medium Eggs
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Sugar Adjust to liking or use a sugar substitute

Instructions
 

  • Add the cottage cheese, oats, eggs, vanilla extract, and sugar to a blender.
  • Blend until smooth, about one to two minutes. If the batter seems thick, add a splash of milk or water.
  • Preheat your waffle iron.
  • Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron. Cook until golden brown and slightly crispy, typically 3-4 minutes or until the steam stops.
  • Carefully remove the waffle and serve immediately with your favorite toppings.

Notes

These waffles are naturally gluten-free if certified gluten-free oats are used. For crispier waffles, ensure the waffle iron is fully preheated and consider cooking for an extra minute or two, or using a 'crisp' setting if available.
