Cream Cheese Chicken

An incredibly comforting, delicious, and ridiculously easy chicken dish with a creamy cream cheese sauce, perfect for weeknights.

  • 8 oz cream cheese softened
  • 2 large chicken breasts Boneless, skinless
  • 0.5 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 0.5 medium onion chopped
  • 3 cloves garlic minced
  • 0.75 cup chicken broth
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon crushed red pepper flakes
  • optional fresh chopped parsley for garnish

Instructions
 

  • Season both sides of the chicken breasts with salt, pepper, and garlic powder.

  • Melt butter and olive oil in a large skillet over medium-high heat.

  • Sear chicken breasts for 3-4 minutes per side until golden brown. Remove from skillet and set aside.

  • Add chopped onion to the skillet and cook for 5 minutes until softened.

  • Add minced garlic and cook for 1 minute until fragrant.

  • Pour in chicken broth and scrape up browned bits from the bottom of the skillet.

  • Stir in Italian seasoning and crushed red pepper flakes.

  • Reduce heat to low. Add softened cream cheese and whisk until melted and smooth.

  • Return chicken breasts to the skillet, coating them in the sauce.

  • Cover and simmer gently for 15-20 minutes, or until chicken is cooked through.

  • Taste and adjust seasoning if needed. Garnish with parsley if desired before serving.

Notes

This dish is fantastic served over rice, pasta, mashed potatoes, or with crusty bread. Steamed vegetables like broccoli or green beans are also a great pairing.
