Creamy Butternut Squash Dip

An incredibly easy and unbelievably creamy Butternut Squash Dip, perfect for cozy nights in and gatherings.

Ingredients
  

Main ingredients

  • 1 medium butternut squash peeled and cubed
  • 2 cloves garlic unpeeled
  • 0.25 cup cream cheese
  • 0.25 cup Parmesan cheese grated
  • to taste salt
  • to taste pepper
  • drizzle olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Toss cubed butternut squash and unpeeled garlic cloves in a bowl with a little olive oil, salt, and pepper.
  • Spread the seasoned squash and garlic onto a baking sheet and roast for 20-25 minutes, until fork-tender and fragrant.
  • Transfer the roasted squash and garlic to a food processor.
  • Add cream cheese and grated Parmesan cheese to the food processor.
  • Blend until smooth and creamy, scraping down the sides as needed.
  • Taste and adjust seasoning with salt and pepper as needed.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Can be served cold, at room temperature, or gently warmed.
