butternut squash
peeled and cubed

Instructions
Preheat your oven to 400°F (200°C).
Toss cubed butternut squash and unpeeled garlic cloves in a bowl with a little olive oil, salt, and pepper.
Spread the seasoned squash and garlic onto a baking sheet and roast for 20-25 minutes, until fork-tender and fragrant.
Transfer the roasted squash and garlic to a food processor.
Add cream cheese and grated Parmesan cheese to the food processor.
Blend until smooth and creamy, scraping down the sides as needed.
Taste and adjust seasoning with salt and pepper as needed.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days. Can be served cold, at room temperature, or gently warmed.
