Equipment

  • Good-sized bowl
  • Mixer Or sturdy whisk
  • Serving dish A pie plate or a shallow baking dish works

Ingredients

Main Ingredients

  • 24 oz Cottage Cheese
  • 1 package Cream Cheese Softened
  • 0.25 cup Sour Cream
  • 0.33 cup Taco Seasoning Use your favorite store-bought packet or make your own blend
  • 1 cup Sharp Cheddar Cheese Shredded
  • 1 Medium Tomato Diced
  • 0.5 Medium Lime Squeezed
  • 1 Medium Jalapeno Pepper Finely diced; remove seeds and ribs for less heat
  • 0.25 cup Green Onions Sliced
  • 1 cup Black Olives Sliced
  • 1 Romaine Heart Shredded
  • Tortilla chips, pita chips, or veggie sticks For serving

Instructions

  • First, grab a good-sized bowl. Add the cottage cheese, softened cream cheese, sour cream, and taco seasoning.
  • Now, get that mixer out – or a sturdy whisk and some elbow grease! Beat these ingredients together until they are nice and smooth. You want a creamy, uniform base. Taste it! Does it need a tiny pinch more seasoning? Now's the time to adjust.
  • Spread this creamy mixture evenly into a serving dish. A pie plate or a shallow baking dish works perfectly.
  • Next comes the fun part – topping it! Sprinkle the shredded cheddar cheese over the cream cheese mixture.
  • Scatter the diced tomato, diced jalapeno (if using), sliced green onions, and sliced black olives evenly over the cheese layer.
  • Give that half lime a good squeeze right over the top of everything. This step is small but mighty!
  • Finally, scatter the shredded romaine lettuce over the very top just before serving for that essential fresh crunch.
  • Grab your favorite tortilla chips, pita chips, or veggie sticks and dive in!

Notes

This recipe is super forgiving and customizable! Try different cheeses like Pepper Jack or a Mexican blend. Stir in cooked ground beef, shredded chicken, or black beans for added protein. Add more veggies like corn, bell peppers, or pickled red onions. Add hot sauce or red pepper flakes for extra heat, or skip the jalapeno for a milder dip. Make sure cream cheese is softened for a smooth base. Finely dice toppings for easy scooping. Don't add lettuce until right before serving. If making ahead, prepare base and toppings separately and assemble just before serving. Leftovers can be stored covered in the refrigerator for up to 3-4 days; add fresh lettuce if needed.
