Creamy Salmon and Orzo Skillet

A quick, easy, and comforting one-pan salmon and orzo dish that's perfect for weeknights or for gifting. The creamy texture comes from Boursin cheese, and it's finished with a bright squeeze of lemon.

Ingredients
  

For the Salmon

  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 4 salmon fillets fresh

For the Orzo

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1 cup fresh or frozen green peas
  • 7 oz Boursin cheese spread or herbed soft cheese
  • 1 lemon for zesting

Instructions
 

  • Season salmon fillets evenly with kosher salt, garlic powder, and black pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets for 3-4 minutes per side until golden brown. Remove from skillet and set aside.
  • Lower heat to medium, add butter to the skillet and let it melt.
  • Add dry orzo pasta to the skillet and stir constantly for 1-2 minutes until lightly toasted and fragrant.
  • Pour in chicken broth, stir, and bring to a gentle simmer. Cook, stirring occasionally, for 8-10 minutes until orzo is tender.
  • Add green peas and stir. Cook for another 2-3 minutes until tender and bright green.
  • Add Boursin cheese to the skillet and stir until completely melted and the orzo is creamy.
  • Nestle the seared salmon fillets back into the orzo mixture.
  • Cover the skillet and cook for another 3-5 minutes, until salmon is cooked through.
  • Squeeze fresh lemon juice over the dish before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days and reheated gently on the stovetop or in the microwave.
