Creamy Southwest Cottage Cheese Dip

This ridiculously easy Southwest Cottage Cheese Dip is a fresh, lighter twist on classic dips. Packed with vibrant, fresh flavors and a delightful creaminess from cottage cheese, it takes just about 5 minutes to whip up and is perfect as a healthy appetizer or snack.

  • 1 cup cottage cheese full fat, low fat, or non-fat
  • 0.5 cup corn kernels canned (drained), fresh, or thawed frozen
  • 0.5 cup black beans rinsed and drained
  • 0.5 cup diced tomatoes Roma or cherry tomatoes work great
  • 2 tablespoons chopped green onions use both white and green parts
  • 0.5 teaspoon cumin
  • 0.5 teaspoon chili powder
  • 1 tablespoon lime juice
  • salt to taste

Instructions
 

  • Grab a medium-sized bowl.
  • Add the cup of cottage cheese to the bowl. If you prefer a smoother texture, you can blitz the cottage cheese in a food processor or blender for a few seconds before adding other ingredients.
  • Add the corn, black beans, diced tomatoes, and chopped green onions to the bowl.
  • Sprinkle in the cumin and chili powder.
  • Pour in the tablespoon of fresh lime juice.
  • Give everything a really good stir using a spoon or spatula to mix all ingredients evenly.
  • Taste the dip and season with salt to personal preference. Add more salt, chili powder, or lime juice if needed.
  • Serve immediately, or pop it in the fridge for at least 15-20 minutes to let the flavors meld and chill for a better result.

Notes

Ensure black beans are thoroughly rinsed. Fresh lime juice is recommended over bottled. Don't skimp on salt – taste and adjust seasoning. Chilling the dip for 20-30 minutes before serving enhances the flavors. Ingredients like vegetables can be pre-chopped ahead of time, but mix with cottage cheese just before serving.
