Instructions
Preheat oven to 400°F (200°C). Roast the garlic head for 40 minutes, until soft.
Squeeze the roasted garlic cloves from their skins.
In a large bowl, combine the shredded cabbage, flour, Parmesan cheese, egg, and salt.
Mix well to combine all ingredients.
Heat a large skillet over medium heat with oil.
Drop spoonfuls of the cabbage mixture into the hot skillet, flattening slightly.
Cook for 2-3 minutes per side, until golden brown and crispy.
Meanwhile, prepare the dip by combining the roasted garlic, Greek yogurt, lemon juice, and salt in a small bowl. Mix well.
Notes
For extra crispy fritters, let them rest on a wire rack after cooking.
