Crustless Spinach, Tomato & Feta Quiche

Equipment

  • Oven Preheat to 375°F (190°C)
  • 9-inch pie dish or oven-safe skillet

Ingredients
  

Vegetables

  • 1 cup fresh spinach chopped
  • 0.5 cup cherry tomatoes halved

Dairy & Eggs

  • 0.5 cup crumbled feta cheese
  • 4 large eggs
  • 0.5 cup milk
  • 1 tsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9-inch pie dish or oven-safe skillet with olive oil.
  • Sauté spinach in olive oil until wilted.
  • In a large bowl, whisk together eggs and milk.
  • Stir in feta cheese, salt, and pepper.
  • Add the sautéed spinach and halved cherry tomatoes to the egg mixture.
  • Pour the mixture into the prepared dish.
  • Bake for 20-25 minutes, or until the quiche is set and lightly golden brown.

Notes

Can be served warm or at room temperature. Leftovers can be stored in the refrigerator for up to 3 days.
