Cucumber Strawberry Salad

Ingredients
  

Salad Vegetables

  • 1 cucumber Cucumber Sliced
  • 1 cup Red onion Thinly sliced
  • 1 cup Bell pepper Diced

Fruit and Dressing

  • 1 pint Strawberries Sliced
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Honey

Instructions
 

  • Wash and slice the cucumber, red onion, and bell pepper.
  • Hull and slice the strawberries.
  • In a large bowl, combine the sliced cucumber, red onion, bell pepper, and strawberries.
  • In a small bowl, whisk together the lime juice, olive oil, and honey.
  • Pour the dressing over the salad and gently toss to combine.
  • Serve immediately or chill for later.
  • Garnish with fresh mint leaves (optional).

Notes

This salad is best served fresh. Adjust the amount of honey to your liking.
