Instructions
Wash and slice the cucumber, red onion, and bell pepper.
Hull and slice the strawberries.
In a large bowl, combine the sliced cucumber, red onion, bell pepper, and strawberries.
In a small bowl, whisk together the lime juice, olive oil, and honey.
Pour the dressing over the salad and gently toss to combine.
Serve immediately or chill for later.
Garnish with fresh mint leaves (optional).
Notes
This salad is best served fresh. Adjust the amount of honey to your liking.
