Ingredients
Chicken Marinade

Boneless, skinless chicken breasts
Cut into 1-inch cubes

Olive oil

Lemon juice

Lemon Rice

Long-grain rice

Chicken broth

Instructions
In a bowl, marinate the chicken cubes with olive oil, lemon juice, and oregano for at least 15 minutes.
In a medium saucepan, melt butter. Add rice and toast for 1 minute.
Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until rice is cooked through.
Stir in lemon zest into the cooked rice.
Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes per side.
Serve the chicken over the lemon rice.
Garnish with extra lemon wedges and fresh herbs (optional).
Notes
For a richer flavor, use bone-in chicken thighs. Adjust seasoning to your preference.
