Delicious Greek Chicken with Lemon Rice Recipe

Ingredients
  

Chicken Marinade

  • 1 lb Boneless, skinless chicken breasts Cut into 1-inch cubes
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano

Lemon Rice

  • 1 cup Long-grain rice
  • 1.5 cup Chicken broth
  • 1 tbsp Butter
  • 1 tbsp Lemon zest

Instructions
 

  • In a bowl, marinate the chicken cubes with olive oil, lemon juice, and oregano for at least 15 minutes.
  • In a medium saucepan, melt butter. Add rice and toast for 1 minute.
  • Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until rice is cooked through.
  • Stir in lemon zest into the cooked rice.
  • Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes per side.
  • Serve the chicken over the lemon rice.
  • Garnish with extra lemon wedges and fresh herbs (optional).

Notes

For a richer flavor, use bone-in chicken thighs. Adjust seasoning to your preference.
