Dill Pickle Cottage Cheese Dip

A ridiculously easy, super quick, and satisfyingly zesty dip that becomes your new go-to snack. It features the tangy flavor of dill pickles combined with creamy cottage cheese.

  • 1.5 cups Cottage cheese full-fat recommended for creamiest texture
  • 0.5 cup Mayonnaise
  • 0.5 cup Dill pickles, chopped finely chopped
  • 3 tbsp Pickle brine
  • 1 tsp Dijon mustard, creamy
  • 2 tsp Dill, dried or 2 tbsp fresh dill, chopped
  • 0.25 tsp Garlic powder
  • to taste Salt
  • to taste Pepper freshly ground

Instructions
 

  • Combine the Base: Grab a medium-sized bowl. First, add your cottage cheese, then scoop in the mayonnaise. Toss in your finely chopped dill pickles and pour in that precious pickle brine. Add the creamy Dijon mustard.
  • Add the Flavor Boosters: Now, sprinkle in the dried dill and the garlic powder.
  • Season to Perfection: Taste it and add salt and freshly ground black pepper as needed. Remember, pickles can be salty, so start with a little, stir, and then taste again before adding more.
  • Mix it All Up: Grab a spoon or a spatula and stir everything together until it's beautifully combined and looks like a luscious, creamy dip. Make sure all those pickle bits are distributed evenly.
  • Chill Out! Cover the bowl and pop it into the refrigerator for at least 30 minutes. This chilling time really lets all those amazing flavors meld together and makes the dip even more delicious.

Notes

This dip is fantastic as is, but you can add cream cheese for extra creaminess, fresh herbs like chives or parsley, red pepper flakes for heat, finely chopped celery or onion for crunch, or smoked paprika for color and a subtle smoky note. Drain your pickles well to prevent a watery dip and always taste and adjust seasonings. Chilling for at least 30 minutes is recommended for optimal flavor melding.
