Main Ingredients

  • 1 pound lean ground beef (85% or 90%)
  • 3 large russet potatoes sliced 1/4-inch thick
  • 2 sweet onions sliced 1/4-inch thick
  • 1 can diced tomatoes (preferably fire-roasted)
  • 2 medium green bell peppers diced

Seasonings & Optional Additions

  • 1 tablespoon diced butter optional
  • 0.5 teaspoon garlic powder optional
  • 1 teaspoon crushed red pepper optional
  • to taste salt and pepper
  • to taste pepperoncini optional

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Brown the ground beef in a large skillet over medium-high heat; drain off any excess grease.
  • In a large bowl, combine the cooked ground beef, potatoes, onions, diced tomatoes, and bell peppers.
  • Stir in the optional butter, garlic powder, crushed red pepper, salt, and pepper.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Bake for 40-45 minutes, or until the potatoes are tender and the casserole is heated through.
  • Let cool slightly before serving. Optional: Top with pepperoncini before serving.
