Instructions
Combine all ingredients in a medium saucepan.
Bring the mixture to a boil over medium heat, stirring frequently.
Reduce heat to low and simmer for 20-25 minutes, or until the jam has thickened to your desired consistency. Stir occasionally to prevent sticking.
Remove from heat and let cool slightly.
Ladle the jam into sterilized jars, leaving about ¼ inch of headspace.
Wipe the rims of the jars clean, and seal with lids.
Process in a boiling water bath for 10 minutes to ensure proper sealing (optional).
Let the jars cool completely. Check seals by pressing down on the center of each lid; if it doesn't flex, it's sealed.
Notes
For a stronger cinnamon flavor, add up to 1.5 teaspoons. Adjust sugar to taste depending on banana ripeness.
