Drunken Monkey Jam

A delicious and easy-to-make banana jam with a hint of warm spice and citrus.

Equipment

Ingredients
  

Fruits & Liquids

  • 3.5 large ripe bananas chopped
  • 1 lime juice of
  • 2 tablespoons orange juice

Sweeteners & Spices

  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.75 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon molasses

Instructions
 

  • Combine all ingredients in a medium saucepan.
  • Bring the mixture to a boil over medium heat, stirring frequently.
  • Reduce heat to low and simmer for 20-25 minutes, or until the jam has thickened to your desired consistency. Stir occasionally to prevent sticking.
  • Remove from heat and let cool slightly.
  • Ladle the jam into sterilized jars, leaving about ¼ inch of headspace.
  • Wipe the rims of the jars clean, and seal with lids.
  • Process in a boiling water bath for 10 minutes to ensure proper sealing (optional).
  • Let the jars cool completely. Check seals by pressing down on the center of each lid; if it doesn't flex, it's sealed.

Notes

For a stronger cinnamon flavor, add up to 1.5 teaspoons. Adjust sugar to taste depending on banana ripeness.
